Boy, have I had a lot of things to do over the past two weeks. A birthday party complete with an awesome cake and this week is the kids Spring Break. So... I haven't been around. I believe I also started out trying to do too much on here and needed to reevaluate how much time I have at this point in life to spend on a blog. I've decided that less will be better during this stage of life.

I have an easy sauce recipe that I go to anytime I want to make a red sauce for pasta. This utilizes that sauce, but the sausage drastically changes the flavor of it. From start to finish this dish should take a little over an hour to make, but most of that is effortless wait til its ready time. Let's start off with what you'll need to get dinner going. Having the horde of children that I do, I've been through all the stages and I know that life gets busier when you have kids, no matter what number you're cooking for. I find that starting with a basic red sauce recipe and a pasta of your choice is a great way to get creative in the kitchen. That's why Italian food is an easy go-to in my house. That's what's on the menu for tonight. This was a pretty quick and easy meal to put together and would make a great weeknight meal. The chicken marinates overnight and is so juicy! Just delicious. So here's what you need to get started. I had planned to serve these with the tomatoes on the side, but forgot they were in the fridge. Also, I have no clue why I had butter in this picture. I was cooking two different things at the time this picture was taken and I'm certain the other recipe called for butter, but this one does not. I guess I just mixed things up a little. Oops!
I find that cookies are a quick and easy homemade goody throughout the year if you're looking for something sweet. However, I have a rather short list of tried and true recipes that I tend to go to. But sometimes, none of them are quite what I'm wanting to eat. So for a while now, I was looking to expand beyond my safety net and create an original recipe for cookies. I came up with these. Try them out; I think you'll love them as much as we did.
I've made this recipe a few times over the past couple of days so that I could play with the recipe and make sure that I was giving you the easiest instructions with the best outcome. Today was one of those days where nothing was going to be easy. My kitchen was a place of utter chaos today and now my computer is being a computer and not working the way its supposed to. I have been working on developing a cookie recipe and I've decided they will be Tuesday's post. It's been a long week for me here and I'm thinking that I could use a sugar rush to accompany my usual coffee high. They're chewy on the outside and soft and moist on the inside with chips of wonderful chocolate and peanut butter sweetness. I'm hoping you'll think they are out of this world. My pictures of this do the dish no justice; it was absolutely incredible. I'm so glad that I got out of my comfort zone with this recipe because it was well worth the effort. My kids were actually asking for more veggies!!! And to top it off, its pretty easy. You should have few to no problems when trying this out for yourself. The original poster (I shared the link to the original recipe yesterday) had some great tips that I followed and I also added some zest of my own to the recipe. Here's hoping that you and yours enjoy this as much as my family did.
Now, enough talk, let's get cooking... I have wanted to start this blog for a few months now... and once I decided to actually do it, I began in the kitchen. I thought I would take this first post to show off some of the things that I've made in the past that have pleased my family. The first dish is Spinach Chicken Stuffed Shells. The second picture is of my oldest's birthday cake back in January. I will admit that I cheated on that one a little- I used a boxed cake mix. However, the fondant was homemade.
